Nielis’ Roasted Tomato, Mozzarella & Carpaccio Salad

Ingredients

Serves: 4 people

Preparation time: 15-20 min

  • 4 tomatoes
  • 200 g buffalo mozzarella
  • 300 g rocket
  • 500 g smoked carpaccio
  • 100 ml balsamic vinegar
  • 100 ml olive oil
  • 2 tbsp wholegrain mustard

Preparation method

  • Slice tomatoes and mozzarella into discs.
  • Place in layers, tomato then mozzarella. Roast 10 min before serving.
  • Roll carpaccio into tubes.
  • Make salad dressing by blending vinegar, oil and mustard.
  • Serve tomato and mozzarella on rocket.
  • Garnish with carpaccio.
  • Drizzle with salad dressing.
