No-batter pickled fish

Ingredients

• 4 sustainable white fish fillets (about 1kg), skin removed
• 3 tbsp (45ml) olive oil
• 3 garlic cloves, sliced
• 2 onions, sliced
• 2 tsp (10ml) ground paprika
• 6 black peppercorns
• 1 tsp (5ml) cayenne pepper
• 2 bay leaves
• 3 tbsp (45ml) curry powder
• 1 tsp (5ml) turmeric
• ¼ cup (60ml) brown sugar
• 1 cup (250ml) white wine vinegar
• ½ cup (125ml) cider vinegar
• ½ cup (125ml) water
• Whole coriander seeds, black peppercorns, whole allspice, whole cloves, chillies or fresh ginger, optional, to taste

Preparation method

  1. Heat a glug of oil in a non-stick pan, and fry seasoned fish until golden and cooked through. Place in a shallow dish, and set aside.
  2. Heat a generous glug of olive oil in a pot. Add garlic and onions, reduce heat and cook until soft.
  3. Add paprika, peppercorns, cayenne pepper, bay leaves, curry powder, turmeric and sugar. Cook for 1 minute.
  4. Add vinegars and water, and bring to the boil. Simmer for 5 minutes.
  5. Add a splash of olive oil, and pour over fish. Cover and refrigerate overnight.
  6. Serve with lots of crusty bread and a fresh salad.
