Orange chocolate cake

Ingredients

Chocolate cake:

  • 6 eggs
  • 2 cups sugar
  • 2tsp vanilla extract
  • 2 cups cake flour
  • 6tsp baking powder
  • 1 cup boiling water
  • ½ cup sunflower oil
  • ½ cup cocoa powder
  • 1 cup finely-grated Cadbury chocolate
  • 1 orange
  • 1tsp orange food colouring

White chocolate mousse:

  • 1 cup white chocolate
  • 250ml double cream

Chocolate ganache:

  • 2 slabs Cadbury Dairy Milk chocolate
  • 1 can dessert cream
  • 1 can Bar One
  • 1 cup uncoloured mini Astros

Oranges:

  • 2 oranges

Whipped cream topping:

  • 400ml fresh cream
  • 3tbsp icing sugar

Preparation method

Chocolate cake:

  1. Preheat the oven to 180°C.
  2. Beat the eggs, sugar and vanilla essence until light and fluffy.
  3. Add the sifted flour and baking powder, and mix.
  4. Divide the mixture into three parts.
  5. Mix ⅓ of the oil, ⅓ of the hot water, orange zest and colouring into a third of the mixture.
  6. Mix the remaining ⅔ with ⅔ of the oil, cocoa powder and ⅔ of hot water.
  7. Pour the chocolate mixture into three round baking pans.
  8. Pour orange into one round baking pan.
  9. In a separate bowl, mix water, oil and cocoa.
  10. Add cocoa mixture to the batter and mix until combined.
  11. Fold in chocolate and pour into greased pans.
  12. Bake for 25-30 minutes.

White chocolate mousse:

  1. Melt the chocolate with half of the cream, and cool.
  2. Whip the remaining cream until thick.
  3. Fold the two mixtures together.

Chocolate ganache:

  1. Melt a slab of chocolate and Bar One in cream over a stove, being careful not to burn the mixture.
  2. Once smooth, set aside to cool.
  3. Keep the mixture cool in the fridge.

Oranges:

  1. Segment the oranges and dip in chocolate.
  2. Leave to cool

Whipped cream topping:

  1. Whip the cream with icing sugar until thick.
  2. Roughly ice the whole cake with it.

Assembly:

  1. Put the first layer with one of the chocolate sponges.
  2. Add a layer of white chocolate mousse.
  3. Cut the orange cake smaller, and in half.
  4. Cut out the middle of the second chocolate cake so that the orange sponge fits in the middle.
  5. Put the cut chocolate cake, then the first half of orange, Astros and orange segments in the middle. Add the second layer over.
  6. Put a layer of white chocolate mousse over.
  7. Add the last chocolate sponge on top.
  8. Cover the whole cake in chocolate ganache and leave to cool.
  9. Lastly, add the whipped cream over, so that none of the chocolate ganache is visible.
  10. Decorate as desired.
