Orange, Poppyseed and Coconut Lamingtons

Ingredients

Cake:

  • 1 ½ tbsp.Butter, melted
  • 3 tbsp. Milk
  • 3ea. Eggs
  • ¾ cup Castor Sugar
  • 1 cup Flour
  • 1tsp. Vanilla Extract
  • 1 ½ tsp. Baking Powder
  • 2 tbsp. Orange Zest
  • 1 tbsp. Poppy Seeds

Orange Syrup:

  • 2 ½ cups Fresh Orange Juice
  • 1/3 cup Butter
  • 3 ½ cups Icing Sugar
  • 2 tbsp. Orange Zest
  • 2 drops Orange Colouring  Pinch Salt

Assembly:

  • 2 cups Desiccated coconut

Preparation method

Cake:

  • Preheat oven to 180’C
  • Beat eggs and sugar until ribbon stage.
  • Fold in all dry ingredients.
  • Fold in poppy seeds and orange zest.
  • Fold in melted butter and milk.
  • Bake in a 34x23cm greased and lined tray for 15min.
  • Allow to cool and then cut into desired shape.

Orange Syrup:

  • Boil all ingredients until dissolved.
  • Dip cake pieces in syrup while syrup is still warm.

Assembly:

  • Dip cake pieces in orange syrup and roll in coconut.
  • Place in small paper cups
