Orzo with vegetables and mozzarella

• Oil for frying
• 1 small onion, chopped
• 2 cloves garlic, sliced
• 3-4 baby marrows, chopped
• 1 small aubergine, diced
• ¾ cup (190ml) orzo
• 1 tbsp (15ml) tomato paste
• Sprig fresh oregano, chopped
• Zest of ½ lemon
• 1-2 cups (250-500ml) vegetable stock
• 2-3 tomatoes, chopped
• 1 red pepper, roasted, peeled and diced
• 120g mozzarella, diced
• Salt and milled pepper
• Handful fresh parsley, chopped

Preparation method

  1. Heat oil in a medium-sized pot and fry onion, garlic, baby marrow and aubergine for about 10 minutes to soften and colour.
  2. Add orzo, tomato paste, oregano and lemon zest. Carefully mix everything together and season.
  3. Pour in stock, and bring to a gentle simmer.
  4. Add tomatoes and red pepper, and simmer until pasta is cooked.
  5. Stir in mozzarella and parsley, season and serve as cheese begins to melt.
