Ingredients

• 2 tbsp (30ml) peanut or coconut oil
• 1 small red onion, chopped
• 4 spring onions, sliced
• 3 chillies, sliced
• 2 fat cloves garlic, crushed
• 3 tbsp (45ml) fish sauce
• 1 tbsp (15ml) Shaoxing rice wine or dry sherry
• Juice of 1-2 limes
• 2 tbsp (30ml) light soy sauce
• Salt and milled pepper
• 1 tsp (5ml) sugar
• 2 tbsp (30ml) oyster sauce
• 1 cup (250ml) bean sprouts
• Handful fresh coriander, to serve
• 3 tbsp (45ml) coarsely chopped roasted peanuts, to serve

Preparation method

  1. Soak noodles in boiling water, until tender. Drain, and set aside.
  2. Heat a wok over high heat, and add oil. When slightly smoking, add onion, spring onions, chillies and garlic. Stir-fry for 1 minute.
  3. Add rice noodles and remaining ingredients, and continue to stir-fry for 2 minutes, mixing well.
  4. Spoon into warm bowls, and serve with coriander and peanuts.
