  • 4 extra large eggs
  • ½tsp vanilla extract
  • 1 cup sugar
  • 1 cup flour
  • 3tsp (heaped) baking powder
  • ½ cup vegetable oil
  • ½ cup passion fruit pulp
  • 2tbsp boiling water


  • 1 container cream cheese
  • 1 cup icing sugar
  • 1 cup passion fruit pulp
  • ½tsp vanilla extract
  • 1 container fresh whipping cream, whipped

Preparation method


  1. Preheat the oven to 170°C.
  2. Prepare cup cake holders.
  3. Separate the egg whites from yolks.
  4. Beat the egg whites into stiff peaks, and set aside.
  5. Beat the eggs yolks, vanilla extract and sugar together until white in colour and fluffy.
  6. Sift in the flour and baking powder, and combine (it won't combine completely).
  7. Gently fold the oil, passion fruit pulp and boiling water into the flour and egg mixture.
  8. Once the ingredients are all combined, gently fold in the egg whites. Try to keep as much egg white volume as possible when combining the whites.
  9. Using an ice cream scoop, spoon equal amounts of batter into the cupcake holders.
  10. Bake for 15 minutes, or until golden brown.
  11. Remove cupcakes from the oven and set aside to cool.


  1. Beat the cream cheese until soft.
  2. Sift the icing sugar into the cream cheese.
  3. Add the passion fruit pulp and vanilla extract to the cream cheese icing, and whip until stiff.
  4. Fold the whipped cream into the cream cheese icing.
  5. Pipe the icing onto the cooled cupcakes.
