Peanut & Salted Caramel Tart

Ingredients

Pastry:

  • 1 Cup Flour
  • ½ tsp. Salt
  • ½ cup Unsalted Butter
  • 1/3 cup Icing Sugar
  • ½cup Chocolate, Melted

Caramel:

  • 1cup Sugar
  • 6tbsp. Salted butter
  • 2/3 cup Whipping cream
  • 1tsp. Salt flakes

Filling:

  • 1 cup Roasted Peanuts

Topping:

  • 1 ½ cups
  • Dark Chocolate
  • 2 tbsp. Peanut Butter

Brittle:

  • 1/2 cup
  • Sugar 1/4
  • cup Corn Syrup
  • 1/2 cup Salted Peanuts,
  • 11/2 tbsps.
  • Butter 1/2
  • tsp.Vanilla Essence
  • 1/2 tsp.
  • Bicarbonate Of Soda
  • 2 tbsp. Candied Ginger Black Salt Gold flakes

Preparation method

Pastry:

  • Preheat oven to 220C
  • Grease rectangular tart pan with loose base
  • In a food processer mixer, mix flour, icing sugar and salt
  • Cut butter into small cubes
  • Add cold butter and pulse to form clumps
  • Transfer pastry into pan
  • Press pastry evenly onto the bottom and sides of the pan
  • Pierce the bottom of the pastry with a fork
  • Cover pastry with cling wrap and place in the freezer for 15 minutes
  • Place tart pan on baking tray
  • Bake for 15 minutes
  • Remove from oven and allow to cool
  • Seal cooled crust by glazing with melted chocolate

Salted Caramel:

  • Melt sugar over medium heat, until thick and golden brown
  • Add butter, whisk for about 3 minutes.
  • Slowly drizzle in cream whilst stirring
  • Boil for 1 minute
  • Remove from heat and add salt flakes
  • Allow to cool before using

Filling:

  • Mix salted caramel with peanuts
  • Pour into baked pastry

Topping:

  • Melt chocolate and peanut butter in microwave
  • Stirring every 15 seconds until smooth
  • Spread over caramel nuts mix and chill in fridge for 30 minutes.
  • Garnish with ginger nut brittle, black salt and gold flakes.

Peanut Ginger Brittle:

  • Grease baking tray and line with baking paper.
  • Mix sugar and corn syrup
  • Microwave on high mixture for 4 minutes
  • Stir in peanuts and ginger
  • Microwave on high for 90 seconds
  • Add butter and vanilla essence, stir til melted
  • Microwave on high for 90 seconds
  • Stir in bicarbonate of soda
  • Pour and gently spread onto baking sheet
  • Sprinkle black salt
  • Allow to cool at room temperature.
  • Break and use to garnish
