Pecan Cobbler with Basil Anglaise

Ingredients

Pastry:

  • ½ cup Butter
  • 1 1/3 cups
  • Sugar, Divided
  • 1cup Flour
  • 1½ tsp. Baking Powder
  • ½ tsp. Salt
  • ½ cup Full Fat Milk
  • 1 tsp. Vanilla
  • ½ cup Pecans, Chopped
  • ¼ cup Toffee, Soft Caramels
  • 1½ cups Boiling Water

Anglaise:

  • 1 cup Cream
  • 2 tsp. Vanilla
  • 4 each Egg yolks
  • 5 tbsp. Sugar
  • 1 each Bunch sweet basil

Preparation method

Cobbler:

  • Preheat oven to 180°C
  • Combine ¾ cup sugar, flour, baking powder, salt, milk and vanilla
  • Pour melted butter into 20cm square baking dish (ovenproof)
  • Pour the batter over the melted butter
  • Combine the remaining ingredients and sprinkle over the batter
  • Slowly pour the boiling water over the top of the cobbler
  • Bake for 40-45 min

Anglaise:

  • Heat cream, vanilla and basil and steep
  • Whisk the egg yolks and sugar until smooth
  • Pour ½ a cup of hot cream into yolk mixture, whisking constantly
  • Pour this back into the remaining hot cream
  • Heat stirring until mixture coats the back of a wooden spoon
  • Remove the basil leaves before serving
