Pistachio and Cardamom Biscuits

Ingredients

Biscuit:

  • ½ cup Blue Cheese
  • 2 cups Flour
  • ¼ tbsp. Salt
  • ¼ tbsp. Cardamom Pods, Crushed
  • ½ cup Butter, Unsalted
  • ½ cup Cream Cheese
  • 1 tsp. Orange Zest
  • 1 cup Pistachio Nuts
  • ½ cup Cornflour
  • ¼ tsp. Cayenne Pepper

Preparation method

Biscuit:

  • Preheat oven to 180C
  • Line 2 baking trays with parchment paper
  • Coarsely chop 75g of pistachio nuts
  • Spread on 1 baking tray
  • Bake in oven for 5 minutes
  • Transfer to a bowl, set aside
  • Sift flour, cornflour, salt, cayenne and cardamom, set aside
  • Mix butter, blue cheese and cream cheese for 2 minutes
  • Add orange zest
  • Reduce speed add flour
  • Mix until combined
  • Remove bowl and fold in baked pistachio nuts
  • Wrap dough with cling film and shape into a log shape
  • Refrigerate log for 1 hour
  • Finely chop remaining nuts
  • Unwrap biscuit log and roll in chopped nuts covering the log
  • Slice log into 0.5cm thick discs, using a knife dipped in hot water
  • Arrange discs on baking tray leaving 2.5cm space around slice
  • Bake for 15-20 minutes
  • Cool and serve
