Poached guavas and mixed seed granola

Poached guavas:

• 1½ cups (375ml) water
• 1 cinnamon stick
• 1 star anise
• ¼ cup (60ml) castor sugar
• 6 guavas, peeled and halved

Mixed seed granola:

• 2 cups (500ml) rolled oats
• 1 packet (250g) mixed seeds
• 100g skin-on almonds, roughly chopped
• 1 cinnamon stick
• Pinch sea salt flakes
• 2 tbsp (30ml) coconut oil
• ⅓ cup (80ml) honey
• 1 egg white, beaten to soft peaks
• ¼ cup (60ml) pitted dates, roughly chopped
• ¼ cup (60ml) dried pears, peaches or apricots, chopped

Preparation method

Poached guavas:

  1. Bring water, cinnamon, star anise and sugar to the boil.
  2. Add the guavas, reduce heat, cover and simmer until guavas are soft (10 -15 minutes).

Mixed seed granola:

  1. Preheat oven to 170°C.
  2. Mix all the ingredients together, except dates and pears.
  3. Spread out in a thin, even layer on an oiled roasting tray.
  4. Bake for 30 minutes, stirring halfway.
  5. Stir through dried fruit, and store in an airtight container.
