Radhi’s Luxurious Lamb Kalya with Braised Saffron Rice & Pineapple Raita

Ingredients

Serves: 6 people

Preparation time: 90 min

  • 2 kg lamb, cubed
  • 2 cups yoghurt
  • 2 tsp red chilli paste
  • 1/4 cup ghee
  • 1 tsp ginger
  • 1 tsp garlic
  • 2 tsp whole jeera
  • 2 tsp white vinegar
  • 1/2 cup tomato sauce
  • 1 1/2 tsp biryani mix
  • 3 tsp chilli powder
  • 1 tsp turmeric powder
  • 1/2 bunch dhania, chopped
  • 3 tsp salt, to taste
  • 3 whole green chilies
  • 2 sticks cinnamon
  • 2 stems curry leaves
  • 4 cups rice (boiled with salt, braised with butter, onions and saffron)
  • 3 potatoes

Preparation method

  • Marinate lamb. Braise with ghee.
  • Fry potatoes and add when lamb is 3/4 way cooked.
  • Serve with saffron rice and pineapple raita.
