Radhi’s Seafood Tango

Ingredients

Serves: 4 people

Preparation time: 45 min

Seafood

  • fresh fish/crayfish (subject to availability)
  • 2 large limes
  • 2 fresh red chillies
  • 1tsp lime zest
  • 5 cloves garlic, crushed
  • 3 cm ginger, chopped
  • 1 med stalk lemongrass, chopped
  • 1/2 bunch coriander roots & leaves, chopped
  • 1/4 cup soy sauce
  • 1/4 cup lime juice
  • 5 tbsp fish sauce
  • 1/2 tsp black pepper
  • 1 bunch shallots

Preparation time: 20 min

Papaya salad

  • 1 med papaya, julienned
  • 1/2 bunch coriander leaves
  • 12 baby tomatoes
  • 1/4 cup lime juice
  • 1 clove garlic, crushed
  • 1 tbsp dried shrimps
  • 1 small piece ginger
  • 1 tsp fish sauce
  • 1 tsp soy sauce
  • 1 small red chilli, chopped
  • roasted peanuts, crushed (if desired)

Preparation method

Seafood

  • Combine all ingredients and marinate preferred seafood for at least 6-8 hrs.
  • Grill on charcoal or electric grill for 5-6 min per side. Be careful not to overcook, as fish will become dry.
  • Serve on a bed of papaya salad.

Papaya salad

  • Combine lime juice, garlic, ginger, chilli and sauces and pound in mortar & pestle.
  • Add to julienned green papaya, baby tomatoes and coriander leaves.
  • Add peanuts if desired.
