Lemon cheese cake
- 1 pkt tennis biscuits
- 60 ml butter, melted
- 2 x 230 g smooth cottage/cream cheese
- 1/2 cup sugar
- 1 tin condensed milk
- 3 tsp powdered gelatine
- 80 m lemon juice
- lemon zest, optional
- 250 ml fresh cream
- granadilla pulp, to serve
Berry surprise
- strawberries / other berries in season
- chocolate, melted
- gold dust sprinkle
Preparation method
Lemon cheese cake
- Crush biscuits and mix with melted butter. Press biscuit mixture onto a rectangular tray. Chill.
- Beat together cottage cheese, sugar and condensed milk, until smooth.
- In a small bowl, sprinkle gelatine over lemon juice and leave to soak through.
- Heat in microwave for a few secs, until gelatine dissolved.
- Stir into condensed milk mixture.
- Whip cream until soft peaks form and fold into condensed milk mixture.
- Pour over biscuit base and leave in fridge to set.
- Serve with topping of choice.
Berry surprise
- Dip strawberries/other berries in melted chocolate and leave to set.
- Sprinkle with gold dust and serve.
