Rasheda’s Smoked Mussel Pot

Ingredients

Serves: 4 people

Preparation time: 60 min

  • 1 kg fresh mussels
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1 tbsp smoked paprika
  • 1 tbsp chilli
  • 1 tbsp jeera (cumin)
  • 1 tbsp fresh herbs
  • 1 sprig coriander
  • 1 tsp salt
  • 2 x 250 ml tins tomato, chopped
  • 1 tsp balsamic vinegar
  • 500 g chorizo, chopped
  • 250 g sundried tomatoes
  • 1 red pepper, chopped
  • 1 orange pepper, chopped

Preparation method

  • Clean mussels and steam.
  • In saucepan, sauté onion and garlic with spices.
  • Add tinned tomato and balsamic vinegar. Cook until well blended.
  • Add chorizo, sundried tomatoes and peppers. Cook further 30 min.
  • Vegetarian option: Use tofu instead of mussels.
