Ingredients

- 1 kg fresh mussels
- 1 onion, chopped
- 1 clove garlic, crushed
- 1 tbsp smoked paprika
- 1 tbsp chilli
- 1 tbsp jeera (cumin)
- 1 tbsp fresh herbs
- 1 sprig coriander
- 1 tsp salt
- 2 x 250 ml tins tomato, chopped
- 1 tsp balsamic vinegar
- 500 g chorizo, chopped
- 250 g sundried tomatoes
- 1 red pepper, chopped
- 1 orange pepper, chopped
Preparation method
- Clean mussels and steam.
- In saucepan, sauté onion and garlic with spices.
- Add tinned tomato and balsamic vinegar. Cook until well blended.
- Add chorizo, sundried tomatoes and peppers. Cook further 30 min.
- Vegetarian option: Use tofu instead of mussels.
