Ingredients

Cupcakes:

  • 250g butter, soft
  • 1½ cups sugar
  • 4 eggs
  • 2¼ cups flour
  • 3tbsp baking powder
  • 2tbsp cornflour
  • ¾ cup milk
  • 1 lemon, zest of
  • ¼ cup lemon juice
  • 1tsp vanilla extract

Raspberry curd:

  • 1 whole egg
  • 3 egg yolks
  • 1/2 cup sugar
  • ½ cup raspberry pulp
  • 2tsp lemon zest
  • 4tbsp butter, cubed

Marshmallow frosting:

  • 1¾ cups sugar
  • 3 large egg whites
  • 1tbsp lemon essence
  • ¼tsp cream of tartar
  • Lemon zest

Assembly:

  • Toasted flaked almonds, to garnish
  • Raspberries, to garnish
  • Glace lemon slices, to garnish

Preparation method

Cupcakes:

  1. Preheat the oven to 180°C.
  2. Cream the butter and sugar until pale and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition. If mixture splits, add flour after each egg.
  4. Sift the dry ingredients and add them along with the milk, lemon zest, lemon juice and vanilla extract.
  5. Mix until just combined.
  6. Divide the batter into greased muffin cups.
  7. Bake for 15-20 minutes.

Raspberry curd:

  1. Put everything except the butter into a pot and mix well.
  2. Heat, stirring constantly, until cooked.
  3. Remove from the heat and slowly add a cube of butter at a time, mixing well after each addition.
  4. Cover and cool until needed.

Marshmallow frosting:

  1. Beat the sugar and eggs over simmering water for about 10 minutes, or until soft peaks that are thick and glossy form.
  2. Remove from the heat and add the remaining ingredients.
  3. Blend until slightly cool.

Assembly:

  1. Ice the cupcakes.
  2. Sprinkle with toasted almonds and garnish with raspberries and glace lemon slices.
