Retro blueberry and brie parcels

• 4 sheets phyllo pastry
• 150-200g brie or blue cheese
• About ½ cup blueberries
• 2 tsp (10ml) thyme
• Melted butter, for brushing

Preparation method

  1. Preheat oven to 200°C.
  2. Halve phyllo sheets, and cut into 10cm squares.
  3. Brush each square with melted butter, and stack 2 squares on top of one another.
  4. Top with a slice of cheese and a few blueberries. Scatter with thyme and season.
  5. Scrunch to create a parcel shape. Repeat to create 8 parcels.
  6. Bake for 10-15 minutes, until crisp and golden.
