Ingredients

Cake:

  • 2 cups cake flour
  • 2 cups semolina
  • 6tsp baking powder
  • 1 cup unsalted butter
  • 2 cups caster sugar
  • 6 eggs, separated
  • 1tsp vanilla extract
  • 2 lemons, zest of
  • 2 cups milk
  • 1 pinch salt

Syrup:

  • 3 cups caster sugar
  • 3 cups water
  • 4 pieces orange zest
  • 2tsp lemon juice
  • 10 cardamom pods
  • 2 cinnamon sticks
  • 5 whole cloves

Glazed oranges:

  • 4 oranges
  • 2 cups caster sugar
  • 2 cups water

Decoration:

  • ¼ cup icing sugar
  • ½ cup flaked almonds

Preparation method

Cake:

  1. Preheat the oven to 180°C.
  2. Grease tray.
  3. Sift flour and baking powder, and combine with semolina.
  4. Cream the butter and sugar, add the egg yolks and beat until pale yellow.
  5. Add vanilla extract and lemon zest.
  6. Add milk and flour mixture alternately while mixing.
  7. Beat egg whites with a pinch of salt to soft peaks. Fold into batter.
  8. Pour into pan and bake for 45 minutes.

Syrup:

  1. Combine ingredients, except lemon juice, in a saucepan and bring to the boil.
  2. Reduce heat and simmer for 5 minutes.
  3. Remove from heat and add lemon juice.
  4. Strain syrup.
  5. Pour over cake while still warm.

Glazed oranges:

  1. Slice oranges thinly, and each slice in half.
  2. Prepare a simple syrup in a saucepan and immerse the orange slices.
  3. Cook on low heat until soft.

Decoration:

  1. Slice the cake into 12 identical slices and decorate with flaked almonds and glazed orange slices.
  2. Sprinkle with sifted icing sugar.
