• 1 pumpkin or butternut, cut into thin wedges
• Olive oil
• 2 tbsp (30ml) brown sugar
• 1 tbsp (15ml) each ground cumin and coriander
• Salt and milled pepper
- Arrange wedges in a baking dish.
- Drizzle with olive oil.
- Mix sugar and spices together, and sprinkle over pumpkin or butternut.
- Bake in a preheated 180°C oven for about 45 minutes.
