Ingredients
• 2kg baby potatoes, boiled
• 10 cloves garlic, unpeeled
• 3 sprigs rosemary
• Olive oil
• Salt and milled pepper
• 350g baby tomatoes
• Handful fresh basil
Preparation method
- Squash cooked potatoes with the back of a spoon to crack open. Toss with rosemary, olive oil and seasoning.
- Roast in a 200°C oven for 45 minutes.
- Add baby tomatoes, and roast for a further 10 minutes.
- Serve scattered with fresh basil.
