Roasted smashed potatoes with garlic and rosemary

Ingredients

• 2kg baby potatoes, boiled
• 10 cloves garlic, unpeeled
• 3 sprigs rosemary
• Olive oil
• Salt and milled pepper
• 350g baby tomatoes
• Handful fresh basil

Preparation method

  1. Squash cooked potatoes with the back of a spoon to crack open. Toss with rosemary, olive oil and seasoning.
  2. Roast in a 200°C oven for 45 minutes.
  3. Add baby tomatoes, and roast for a further 10 minutes.
  4. Serve scattered with fresh basil.
