Sesame-crusted chicken liver salad

Ingredients

Chicken livers:

• 500g chicken livers
• Salt and milled pepper
• Sesame seeds
• Oil, for frying

Salad:

• 2 cups cooked brown rice
• 300g green beans, blanched and sliced
• 3 large carrots, cut into julienne strips
• Herbs or leaves, optional

Dressing:

• ¼ cup (60ml) canola or olive oil
• 1 fat clove garlic, crushed
• 2 tbsp (30ml) white vinegar or white balsamic vinegar
• 1 tbsp (15ml) mayonnaise or yoghurt
• Salt and milled pepper

Preparation method

  1. Season chicken livers, coat in sesame seeds and chill.
  2. Heat oil in a large pan, and fry until livers are cooked through but still pink (about 6-7 minutes).
  3. Toss beans, carrots and rice together and add herbs or leaves if you have any to hand.
  4. Mix dressing ingredients, and toss through salad.
  5. Pile chicken livers onto salad, and serve while livers are still hot.
