Sesame-crusted fish burgers

Ingredients

Patties:

• 450g sustainable white fish fillets
• 4 spring onions
• Handful parsley
• Grated peel of 1 lemon
• Salt and milled pepper
• ¼ cup (60ml) panko crumbs
• 2 tbsp (30ml) sesame seeds
• Vegetable oil, for frying

Guacamole salsa:

• 1 ripe avocado, finely chopped
• Juice of 1 lime
• 1 small chilli, very finely chopped
• 1 large tomato, finely diced
• Salt and milled pepper

To serve:

• Burger buns of your choice
• 2 tbsp (30ml) sweet chilli sauce
• 1 tbsp (15ml) mayonnaise

Preparation method

  1. Place fish, spring onions, parsley and lemon peel into a food processor, and blend.
  2. Season well.
  3. Use your hands to shape fish into patties.
  4. Mix panko and sesame together, and place in a shallow dish. Dip each patty into mixture to coat.
  5. Chill for 15-20 minutes to firm up.
  6. Heat a drizzle of oil in a frying pan. Cook burgers for 3-4 minutes each side until golden and cooked through, adding a drizzle more oil if the pan looks too dry.
  7. Meanwhile, mix the guacamole salsa ingredients together and season to taste.
  8. Spread mayo and sweet chilli onto burger buns.
  9. Top with patty and guacamole.
