• Olive oil, for frying
• 1 large leek, finely sliced
• 200g smoked snoek, flaked
• 2 tbsp (30ml) fresh chives, chopped finely
• ¼ cup (60ml) cream
• Salt and milled pepper
• 4 eggs
- Heat olive oil, and fry leek until soft.
- Mix snoek, chives, cream and seasoning together.
- Stir through leeks, and toss gently.
- Spoon into an oven-to-table dish, and crack eggs on top.
- Bake for 8-10 minutes, until the whites of the eggs are set but the yolks are still runny.
- Serve immediately.
