Ingredients

• Olive oil, for frying
• 1 large leek, finely sliced
• 200g smoked snoek, flaked
• 2 tbsp (30ml) fresh chives, chopped finely
• ¼ cup (60ml) cream
• Salt and milled pepper
• 4 eggs

Preparation method

  1. Heat olive oil, and fry leek until soft.
  2. Mix snoek, chives, cream and seasoning together.
  3. Stir through leeks, and toss gently.
  4. Spoon into an oven-to-table dish, and crack eggs on top.
  5. Bake for 8-10 minutes, until the whites of the eggs are set but the yolks are still runny.
  6. Serve immediately.
