Ingredients

Soetkoek biscuit:

  • 500g butter, soft
  • 200ml sunflower oil
  • 2 x 500ml yellow sugar
  • 10ml ground cloves
  • 10ml ground ginger
  • 10ml ground mixed spice
  • 2 large eggs, lightly beaten
  • 250ml ground almonds
  • 1kg cake flour
  • 10ml bicarbonate of soda

Buttercream icing:

  • 4 cups icing sugar
  • 1tsp vanilla extract
  • 250g soft butter
  • 100ml milk

Royal icing:

  • 3 large egg whites
  • 500g icing sugar

Gumpaste:

  • 250g icing sugar
  • 1tbsp tylose powder
  • 1tsp liquid glucose
  • 2tbsp cold water

Powdered and liquid food colouring:

  • Black
  • Red
  • Yellow
  • Green
  • Blue

Preparation method

Soetkoek biscuit:

  1. Place butter in electric mixer. Beat until soft and creamy.
  2. Stir in oil until well blended.
  3. Add sugar and beat until light and fluffy.
  4. Stir in spices, then beat in egg.
  5. Stir in ground almonds.
  6. Sift flour and bicarbonate of soda, and stir into mixture to make a fairly stiff dough.
  7. Cut out shapes.
  8. Place on greased baking pans and bake at 180°C until golden brown (about 10-15 minutes).

Buttercream icing:

  1. Mix butter until soft.
  2. Add icing sugar and extract.
  3. Beat with hand beater.
  4. Add milk, as needed. The mixture must not be too soft.
  5. Shade with colouring, as needed.

Royal icing:

  1. Strain egg white through muslin cloth.
  2. Beat egg white with hand beater until frothy.
  3. Add sugar, bit by bit, to get relevant consistency.
  4. Shade with colouring, as needed.

Gumpaste:

  1. Sift icing sugar and tylose together in a large bowl.
  2. Make a well in the centre, and add glucose and water.
  3. Mix with fingertips until soft.
  4. Knead to a stiff dough.
  5. Keep working until paste is pliable and elastic.

Assembly:

  1. Scene to be assembled on a 40cm-thick square cake board, as detailed below.

Shapes required:

  • 2 x lifesavers
  • 2 x beach balls
  • 2 x penguins
  • 2 x surfboards
  • 2 x swim suits
  • 2 x sharks
  • 1 x beach umbrella
  • 3 x sets of colourful changing rooms
  1. Three rectangle (10cm x 20cm) biscuits used for the sea and sand section.
  2. Rectangles to be packed on one section of the board. Half to be colour with blue buttercream to resemble the sea. Second half yellow buttercream to resemble sand. The yellow to be piped with a small star nozzle.
  3. Lifesavers covered in gumpaste and red buttercream.
  4. Beach balls and umbrella covered in royal icing in shades of red, yellow and blue.
  5. Surfboards covered in gumpaste and buttercream designs.
  6. Sharks to be covered in grey buttercream.
  7. Constructed beach huts to be covered in buttercream. The roof piped blue, and each house a different colour – red, yellow and green.
  8. Crushed biscuits and brown sugar to be used around the huts as sand. In front of the huts, green piping to be used to resemble grass.
  9. Place umbrella, a surfboard, one lifesaver, penguins, beach ball and swim suits on the sand section of the board.
  10. Place sharks, surfboard and lifesaver in the sea.
