Ingredients
Soup:
• Olive oil, for frying
• 1 large onion, chopped
• 1 stick celery, chopped
• 1 red pepper, chopped
• 2 garlic cloves, crushed
• 2 tsp (10ml) cumin
• 1 tbsp (15ml) ground coriander
• 1 tsp (5ml) smoked paprika
• 1 coil chorizo sausage, sliced
• 2 x 410g cans mixed beans, drained
• 1 can (420g) chopped tomatoes
• 1 litre beef stock
• Salt and milled pepper
• Fresh coriander, optional
Crunchy tortilla and cheese sprinkle:
• 1 cup tortilla chips (nachos), broken
• ½ cup grated mature cheddar cheese
• Handful fresh coriander, chopped
Preparation method
Soup:
- Heat oil in a large pot.
- Fry onion, celery and pepper.
- Add garlic and spices, and cook until aromatic.
- Add chorizo, and stir to coat in spices.
- Add remaining ingredients, and bring to the boil.
- Reduce heat, cover and simmer for about 20 minutes.
- Season to taste.
- Serve with crunchy tortilla topping.
Crunchy tortilla and cheese sprinkle:
- Mix all ingredients together.
- Sprinkle on top of soup.
