Spiced bean and chorizo soup

Ingredients

Soup:

• Olive oil, for frying
• 1 large onion, chopped
• 1 stick celery, chopped
• 1 red pepper, chopped
• 2 garlic cloves, crushed
• 2 tsp (10ml) cumin
• 1 tbsp (15ml) ground coriander
• 1 tsp (5ml) smoked paprika
• 1 coil chorizo sausage, sliced
• 2 x 410g cans mixed beans, drained
• 1 can (420g) chopped tomatoes
• 1 litre beef stock
• Salt and milled pepper
• Fresh coriander, optional

Crunchy tortilla and cheese sprinkle:

• 1 cup tortilla chips (nachos), broken
• ½ cup grated mature cheddar cheese
• Handful fresh coriander, chopped

Preparation method

Soup:

  1. Heat oil in a large pot.
  2. Fry onion, celery and pepper.
  3. Add garlic and spices, and cook until aromatic.
  4. Add chorizo, and stir to coat in spices.
  5. Add remaining ingredients, and bring to the boil.
  6. Reduce heat, cover and simmer for about 20 minutes.
  7. Season to taste.
  8. Serve with crunchy tortilla topping.

Crunchy tortilla and cheese sprinkle:

  1. Mix all ingredients together.
  2. Sprinkle on top of soup.
