Ingredients

Pastry:

  • 2 cups flour
  • 2tsp baking powder
  • ¼tsp salt
  • 125g soft butter
  • ½ cup white sugar
  • 1tbsp oil
  • 2tsp vanilla extract
  • 1 egg (slightly beaten)

Apple filling:

  • 550g Granny Smith apples
  • 40g ground almonds
  • 1tbsp ground cinnamon
  • 60g raisins
  • ½tsp ground ginger
  • ½ lemon, juice of
  • ½ cup white sugar

Mini toffee apples:

  • 2 tins baby apples with stems
  • 125ml caster sugar
  • ½tsp wine vinegar
  • 30ml golden syrup
  • 1tbsp water

Decoration:

  • Icing sugar

Preparation method

Pastry:

  1. Pre heat Oven at 180°C.
  2. Grease and line a 22cm-square loose-bottom cake pan.
  3. Sift flour, baking powder and salt together.
  4. Beat butter until smooth. Add sugar and oil, beat until light and fluffy.
  5. Add vanilla extract and beaten egg.
  6. Slowly work in flour to form crumbly dough.
  7. Take ¾ of the dough and press evenly into the base of the lined tin.

Apple filling:

  1. Peel, core and chop apples into medium-sized chunks.
  2. Sprinkle with lemon juice to prevent discolouration.
  3. Mix ground almonds, raisins, cinnamon, ginger and sugar together. Add to the prepared apples. Mix well to combine.
  4. Spread mixture evenly over prepared pastry base.
  5. Coarsely grate remaining dough over the apple filling layer.
  6. Bake for 40-45 minutes, until golden.

Mini toffee apples:

  1. Dissolve caster sugar in water over a medium heat.
  2. Add the syrup and vinegar, and boil to 140°C .
  3. Using a wooden skewer, dip bases of mini apples into caramel.
  4. Place onto parchment paper to dry.

Decoration:

  1. Cut cooled cake into 12 equal slices.
  2. Dust with icing sugar.
  3. Place toffee apple on top of each slice.
