Spicy fruit buns and pretzel rolls

Ingredients

Spicy fruit buns:

  • 4 x 250ml cake flour
  • 5ml mixed spice
  • 5ml cinnamon
  • 5ml salt
  • 60g soft butter
  • 60ml currants
  • 60ml mixed peel
  • 125ml caster sugar
  • 1 packet instant yeast
  • 125ml tepid water
  • 125ml tepid milk
  • 1 egg, beaten

Spicy fruit buns glaze:

  • 30ml milk
  • 30ml caster sugar

Pretzel rolls:

  • 300g cake flour
  • 10ml sea salt
  • 15ml sugar
  • 10g instant yeast
  • 125ml warm milk
  • 125ml warm water
  • 45ml oil
  • 80ml bicarbonate of soda
  • 1 egg, beaten
  • 30ml coarse sea salt
  • ½ litre boiled water

Preparation method

Spicy fruit buns:

  1. Preheat the oven to 200°C.
  2. Sift flour, mixed spice, cinnamon, sugar, salt and yeast into a bowl.
  3. Rub in butter.
  4. Add currants and mixed peel.
  5. Mix egg with milk, and add.
  6. Mix to make a dough by adding the water bit by bit. You must have a soft consistency.
  7. Tip out on work surface and knead for 5-10 minutes.
  8. Cover in greased bowl and leave to double in size.
  9. Turn dough out on floured surface.
  10. Divide into equal balls.
  11. Shape and place, spread out, on a greased baking pan.
  12. Cover with damp cloth and prove for 30 minutes.
  13. Bake at 200°C.
  14. Cover with glaze as it comes out of the oven.

Spicy fruit buns glaze:

  1. Heat milk and sugar together, and stir until sugar dissolves.

Pretzel rolls:

  1. Add flour, sea salt and sugar in a bowl.
  2. Mix through.
  3. Add the yeast, and stir.
  4. Whisk together milk, water and oil.
  5. Add to flour mix and stir with a wooden spoon for a soft dough.
  6. Tip out on a work surface dusted with flour.
  7. Knead for 10 minutes, until smooth and elastic.
  8. Leave to prove for 1 hour, or doubled in size.
  9. Knock down dough, and break into 12 even pieces.
  10. Roll out into sausage shape.
  11. Make into a pretzel shape.
  12. Dissolve the bicarbonate of soda in ½ litre boiled water.
  13. Soak each roll in this solution for 1 minute.
  14. Place rolls on baking tray.
  15. Prove for another 30 minutes.
  16. Glaze with egg wash and sprinkle with salt.
  17. Bake for 15 minutes at 200°C.
