  • 400g plain flour
  • 50g cornflour
  • 200g butter, cubed
  • 1 lemon
  • 100g icing sugar
  • 1 packet boiled sweets
  • 4 egg whites
  • 3 cups icing sugar
  • Colouring

Preparation method

  1. Sift the flour and cornflour together.
  2. Rub the butter into the flour until the mixture resembles fine breadcrumbs.
  3. Grate the zest from half a lemon and squeeze the juice.
  4. Add icing sugar, lemon zest and 2tbsp of lemon juice into the flour with a blunt knife.
  5. Finish bringing the mixture together with your hands to form a soft dough. It should be soft enough to have a smooth crack-free surface, but firm enough to roll and cut out.
  6. Preheat the oven to 180°C.
  7. Line the baking sheets with baking parchment.
  8. Roll the dough out to 5mm on a floured surface.
  9. Cut out cookies to form Johannesburg skyline.
  10. Add windows in the buildings and speech bubbles.
  11. Bake the cookies for 4 minutes.
  12. Remove from the oven
  13. Place a sweet in the windows and speech bubbles.
  14. Return to the oven and bake for a further 6-7 minutes, until the cookies are a very pale golden colour and the sweets have melted to fill the hole.
  15. Remove the cookies from the oven.
  16. Cool completely before peeling away from the paper.
  17. Make royal icing.
  18. Pipe on details and words.
  19. Arrange the scene vertically.
