Sticky Date and Chocolate Pudding



  • 85g Soften Butter
  • 100g Pitted Dates
  • 100g Light Brown Sugar
  • 1tsp.Vanilla Essence
  • 2ea. Eggs
  • 100g Flour
  • 1 1/2 tsp. Baking Powder
  • 1 Very Ripe Banana Butter For Greasing


  • 85g Dark chocolate
  • 55g Butter
  • 30ml Fresh Cream

Preparation method


  • Preheat oven, 180C
  • Grease 4x 200ml pudding ramekins with butter.
  • Soak dates in boiling water for 10 minutes
  • Beat butter, sugar and vanilla essence until pale and creamy
  • Beat in eggs
  • Fold in the flour and baking powder
  • Strain dates, puree in a food processor
  • Add to flour mixture with the bananas
  • Spoon into ramekins, almost to the top
  • Place on baking sheet
  • Bake for 20 minutes until risen and just firm to the touch.
  • Cool for 5 minutes
  • Loosen with a knife and invert onto plates

Sauce Method:

  • Place the sugar, butter, chocolate and cream in a pan
  • Heat gently for 5 minutes until syrupy
  • Pour over the warm pudding and serve
