Stuart’s Durban Banana Split

Ingredients

Serves: 4 people

Preparation time: Banana: 20 min, Honeycomb: 60 min, Ice cream: 60 min

Banana split

  • 2 tbsp dark rum
  • 2 tbsp honey
  • 4 firm bananas

Honeycomb crumb

  • 5 tbsp butter, to grease
  • 200g castor sugar
  • 5 tbsp honey
  • 2 tsp bicarbonate of soda

Rum & raisin ice cream

  • 1/2 cup raisins
  • 125 ml dark rum
  • 1 tsp vanilla extract
  • 500 ml milk
  • 3/4 cup sugar
  • 500 ml cream

Preparation method

Banana split

  • In a bowl, combine rum and honey.
  • Cut bananas in half lengthways, leaving skin on.
  • Place bananas, cut side down, on smoking-hot griddle pan for 3 min.
  • Turn and brush with honey mixture.
  • Grill for further 5 min, until tender.
  • Peel and serve.

Honeycomb crumb

  • Grease 20cm tin with butter.
  • Mix sugar and honey in deep saucepan, over a gentle heat, until all sugar has melted.
  • Once melted, turn up heat until the sugar bubbles.
  • Add bicarb and beat with wooden spoon, until mixture is foaming.
  • Pour into greased tin and allow to fully cool.

Rum & raisin ice cream

  • Soak raisins in rum overnight.
  • Place all ingredients in a bowl and mix.
  • Pour into ice cream maker and follow manufacturer’s instructions.
