Vusi’s Almond Crème Crêpes & Berry Coulis

Ingredients

Serves: 6 people

Preparation time: 90 min

Crêpes

  • 2 cups flour
  • 1/2 tsp salt
  • 30 g butter
  • 4 eggs
  • 2 tbsp cooking oil
  • 1 cup milk

Almond crème

  • 1 cup double cream
  • 1/2 cup castor sugar
  • 1 pkt sliced roasted almonds

Berry coulis

  • 1/2 cup castor sugar
  • 2 cups mixed berries
  • 1 lemon, juiced

Preparation method

Crêpes

  • Mix together flour and salt.
  • Melt butter and add to flour.
  • Add eggs, oil and milk. Mix until smooth.
  • Cook crêpes in medium heat pan.

Almond crème

  • Whisk cream until thick.
  • Add castor sugar until glossy.
  • Fold in almonds.

Berry coulis

  • Heat saucepan, add castor sugar, berries and lemon juice.
  • Leave on heat until reduced.

To serve

  • Fill crêpes with almond crème and drizzle over with berry coulis.
  • Serve remaining coulis in small individual serving jugs.
