Ingredients

Crêpes
- 2 cups flour
- 1/2 tsp salt
- 30 g butter
- 4 eggs
- 2 tbsp cooking oil
- 1 cup milk
Almond crème
- 1 cup double cream
- 1/2 cup castor sugar
- 1 pkt sliced roasted almonds
Berry coulis
- 1/2 cup castor sugar
- 2 cups mixed berries
- 1 lemon, juiced
Preparation method
Crêpes
- Mix together flour and salt.
- Melt butter and add to flour.
- Add eggs, oil and milk. Mix until smooth.
- Cook crêpes in medium heat pan.
Almond crème
- Whisk cream until thick.
- Add castor sugar until glossy.
- Fold in almonds.
Berry coulis
- Heat saucepan, add castor sugar, berries and lemon juice.
- Leave on heat until reduced.
To serve
- Fill crêpes with almond crème and drizzle over with berry coulis.
- Serve remaining coulis in small individual serving jugs.
