Vusi’s Crispy Duck with Noodles

Ingredients

Serves: 6 people

Preparation time: 3 hrs

Noodles

  • 3 eggs
  • 3 cups flour
  • 2 tsp salt and pepper
  • 2 tsp olive oil
  • 1/2 cup water
  • 1/2 cup fresh cream
  • 1 pkt coriander
  • 1 pkt basil

Duck

  • 6 duck breasts
  • 1/2 cup vinegar
  • 1/2 cup water
  • chilli
  • ginger
  • garlic
  • onion
  • 2 tsp tomato sauce

Preparation method

Noodles

  • Beat together 2 egg yolks and 1 whole egg.
  • Add eggs to a mix of flour and salt, then add water and oil. Mix well, until elastic.
  • Roll thinly, cut into thin strips, leave to dry 20 mins. Drop into boiling water.
  • Once noodles cooked, pour in some fresh cream, simmer 5 mins. Add chopped basil and coriander.

Duck

  • Scar duck breasts. Fry skin-side down until crisp, then season with salt and pepper, to taste.
  • In saucepan, heat water and vinegar. Add chopped chilli, garlic, ginger, salt, onion and tomato sauce. Stir until sticky.
  • To serve: Rest duck on bed of noodles.
